Create a filter
Make it manual only and active (at the options tab of the filter)
Condition: any message
Action: Export message to file, yoiu can enter the path manually or browse to an existing file, check 'plain text' and 'append to existing file', press the template button and use %FromAddr as template.
Now sel ect your folder, fr om the menu pick: Folder -> Re-filter -> select 'manual filters only' and run them.
