Unfortunately there isn't a way to wrap the text. The emails you are receiving are formatted by senders. The same works for email that you are sending. Your recipients receive emails the way that you format them.

I have my workspace set to Full Height Account Tree and when I receive some emails (both html and text) the text fills the full width of the preview pane.

Is there a way to wrap the text to only 70 or 80?  I have a 20" monitor and find it easier to read if the lines aren't so long.
