Have you tried Options | Preferences | Viewer/Editor | Header Layout ?

Here you'd select an item (such as Field Value background) and set its color.

I have a problem with the compose/message forwarding windows - the part where you enter details for recipients, subject, etc has turned black, so I cannot see what is in each field without clicking on the respective fields. It was working fine until yesterday. Also, the message headers in the previous pane exhibited the same behaviour, but I have managed to change those back again after finding the relevant settings. I cannot find any way to restore the other problem though, so I would appreciate it if anyone can advise. I have logged a support request as well. You should be able to view a screenshot here.
