Yes, TB is very configurable in this regard. You can customize such things at the level of individual accounts, message folders, address book contacts, contact groups...

====quote====
Mad Batter wrote:
At the bottom of my replies I currently have the main address still showing as the mailto: address.

I guess I should get rid of that too.
=============

If I understand correctly, you're referring to message templates for replies. That is also customizable at all levels.
I think I managed to fix the problem after consulting with the Help file.

The first thing I did was add a Reply To: field when I hit Reply.
Embarrassing as it sounds I never had it regularly show up when I sent
replies, despite using the program for many years.

Then I figured out how to add the subset e-mail address as the default address
when I hit Reply.

I think I should be good to go, except for one thing.
At the bottom of my replies I currently have the main address still showing
as the mailto: address.

I guess I should get rid of that too.
I have had this problem for the longest time and would like to finally learn how
to fix it.

I have created many accounts (folders) that are subsets of a main e-mail account.
When e-mails are sent to the main account they are filtered into these subset accounts.

How can I, on the fly, reply to an e-mail addressed to a subset account and have the
subset account address show in the 'mail to' address?

Because right now when I try to reply, the main e-mail account shows as the 'mail to' (reply).

Thanks!
