When training you don't want to retest stuff, but to tell TB what's spam or not.
You do that by selecting the message(s) you want to use for training and in the menu you pick:
Specials -> Mark as Junk
or
Specials -> Mark as NOT Junk
Depending on the specific messages you've selected, of course.

When training junkmail filters, is there anyway to "retest" mail that you already have for junk?  or will it only re-filter junk mail on new mail that arrives?
