Create a filter with condition 'Any message' that exports the message to a text file, set the options for the action to append to file and use a template for the exported message that's restricted to:
%From   %Date
Set this filter as your first (top) filter.
In case you want to use more filters than just this one, set the options for the filter to 'Continue processing with other filters'

I wish to create a filter which takes the sender's name (and the date) and writes it to a text file log.  I want each new email to append the log, rather than overwriting it.

Is this possible?  I'm assuming that it is, but I haven't figured out how yet.
