auto check is a per-account setting, open account properties and click Options on the left, there you can set check interval. Click Sound on the left to set sound notification.

If you want to check many accounts at once use the scheduler - ALT+F11

OK, I've figured out how to minimize to the system tray however I cannot figure out how to configure it to auto check for new mail. I sent some test e-mails and waited for over an hour and it doesn't seem to auto-check.
Also, once I figure out the auto check, I would like some kind of sound notification. I can't seem to find either in Options-->Preferences.
