>>can you colour-group by destination folder

as long as the message is sorted by a filter, yes - just in the list of filter actions put 'set color group' action before(or after) 'move to folder' action.
If you manually delete or move messages that's not possible, but a workaround could be to make hotkey-triggered filters - if I correctly remember these process only the currently selected messages. So you can mark a message and press a shortcut, and the filter will then set a color and then move it to a folder(Trash or any other). The disadvantage is you should change your habbits to use another keyboard shortcut as most likely DEL can't be used as a hotkey
I don't know what ypu want to achieve, but you can't assign a colour group by moving/deleting it.
Does anyone know if it's possible to assign a colour group to a message as you delete it or it's sent to the junk folder?

In other words, can you colour-group by destination folder (I can only find 'source folder') or by 'deleted' flag (which I can't find anywhere)?

Any help much appreciated!
