Mail-Address Field "To:" remains empty when selecting from Addressbook, The fields in the e-ail address header (to, cc, subject) remain empty

I have problems with the header fields (to, cc, subject).
I cannot select from the addressbook; when clicking in eather of these fields automatically the string which I wrote last in another fied is copied into it.

I'm not sure I understand you correctly.
When you click on a header field it gets filled with some data from another (header) field?
Or do you mean to say that when you press the icon with two 'V's  you're getting the value of the same header field, but from a previous message. The latter is what's supposed to happen as that is the history button.
When you want to insert data from the address book into the To:, CC: or BCC: fields, then you'll need to press the icon with the 'contact card at the útmost right  of the mentioned fields.
When none of this makes any sense then I'm probably missing the point of your question, but then I don't understand why you'd want to insert data from your address book into your Subject: header.

that is just what I did, I selected from the contact list an address, but the selected contact is not copied into the To:-field.
Another observation:
When I typed the address manually into the To: fileld and then clicking into the subject field the same content shows automatically in this subject field.

That's odd behaviour. I cannot reproduce that over here.
What version of TB are you using?
I suppose this happens to new messages, does it happen to replies and forwards too?
Is it happening for all accounts an folders or just one account or folder?

I use TheBat V3.85.03.

It happens to replys and forwards, too.

It happens to all accounts and folders.

When did this start happening? With the update to the latest release (or is this the first release of TB that you're using) or just at a random moment?

It looks like something has gone corrupt. Did you try to uninstall and install TB again?

What I just tried is this:

1. uninstall v3.85.03
2. reinstall v3.85.03 --> malfunction remained
3. uninstall v3.85.03
4. install an old version v3.0.1.33 --> this works perfectly, all is OK
5. overinstall v3.85.03 again --> malfunction is back again
6. uninstall v3.85.03
7. reinstall v3.0.1.33 -->> all OK again

Conclusion:
the problem is in v3.85.03; an older version (at least v3.0.1.33) is OK. I could not check newer versions than v3.0.1.33 since I do not have a download available.
