Can theBat! extract the content of an attachment and...
 
Can theBat! extract the content of an attachment and convert it to a .txt file? and store that file in a Windows My Document folder?
 
TB can extract attachments and store them wherever you like, but it can't convert it to another format.

"TB can extract attachments", can you elaborate on this? Does TB just seperate the attachment from the email? Or does it actually open the attachment and extract the contents?
 
With extracting the attachments I  mean that TB saves the attached file to a specified location, this can either be done manually or as a filter action.

TB can't process the contents of the attachment. (apart from attached messages) When you want to open the message you can do so, but in that case it's passed through to the associated application.
