Column Sorting

If I say yes, then that sort order is used for every other account and list. How do I set a different sort order for each account/list?

You can create different view modes (Folder -> View modes -> Manage view modes) and assign folders to those view modes (Folder -> Properties -> General -> Column settings) Or you set every folder to use folder specific settings.
