I'm trying to find the location of the Bat's connection logs to try to establish when a problem on the mail server started and when it was fixed. Viewing logs from within the Bat only seems to show from the current time onwards.

See if there is an ex_log.txt file in your mail directory. That may have the info you are seeking.

I can see them going back several months from within The Bat. Account | Properties | Options has a setting for the desired maximum log file size, and a 'verbose' option. Have you tried those? Also, Account | Transport | Protocol Logging has settings for additional send/receive logs.
